I last wrote about my first ever recipe-cooking experience, the surprising success. Defeating that recipe felt so good, and was so inspiring, that I went at it again. This time I aimed for a more easier challenge.
Santa Fe Stuffed Peppers
This meal is super easy, super healthy, and super delicious.
- Bell Peppers
- Ground Turkey
- Black Beans
- Corn
- Cilantro
- Chives
- Onions
- Jalapeños
- And Lots of Cheese
The ingredients were easy to shop for (I knew what everything was without having to do research) and it gave me a lot of room to add my own flavors without feeling like I was going to screw the whole thing up.
I have to say, it was a smashing success!
I’m also finding that I can create multiple different meals in one cooking session by looking up how to use leftover ingredients for easy, tasty meals.
For example,
The recipe called for 1/3 cup of chicken broth, but all I had was a quart sized container. I didn’t want the rest of it to go to waste so I ended up using it to make brown rice and added it to the bell pepper filling.
That got me thinking…
Instead of making a few cups, I would cook the whole bag of rice and make another dish.
I looked up a Mexican rice recipe and was able to meander my way through it without going to the store, using red salsa instead of tomato puree.
It turned out great!
Too bad my husband is the world’s biggest tomato rival, I’m going to be eating that rice with every meal for the next week!
